CHOC-NANA MUFFINS

INGREDIENTS:

  • 1 1/2 cups of wholemeal self raising flour

  • 1 cup (2 large, very ripe bananas)

  • 2 tbsp of rice malt syrup or honey

  • 1 tbsp of extra virgin olive oil

  • 1 tsp of vanilla essence

  • 1/2 a teaspoon of baking powder

  • 2 eggs

  • 100g or roughly 4 heaped tablespoons of plain greek yogurt

  • 3 teaspoons of cinnamon

  • 1 teaspoon of chia seeds

  • 2 teaspoons of hemp seeds

  • Roughly 5 squares of dark cooking chocolate chopped (I used 75%) or you can use choc chip pieces

Optional add ins

  • Walnuts

  • berries (raspberries or blueberries)

METHOD:

  1. pre heat the oven to 180 degrees celsius

  2. Mash the bananas

  3. Mix the yogurt, syrup, eggs, vanilla essence, olive oil and the banana together (the wet ingredients)

  4. Sift the flour into a mixing bowel and add the cinnamon, baking powder, chia and hemp seeds and chocolate, mix to combine.

  5. Pour the mixture into a cup cake/muffin tin lined with baking paper cups

  6. Cook the muffins for roughly 20 minutes, check it at 10 minutes by sticking a skewer or knife through the middle. Once cooked through let it sit for 5 minutes in the tin and enjoy!

Makes roughly 8 muffins
Can be made vegan if a dairy free yogurt is used and a chia or flax seed egg/ egg replacer is used.
