PIZZA SCROLLS
INGREDIENTS:
2 cups High protein plain Greek yogurt (I use YoPro by Danone)
2 cups Wholemeal self-raising flour
1 Cup Light Cheese
Tomato paste
1 cup vegetables around 150g (I used capsicum, mushrooms, spinach, tomato, red onion and garlic)
METHOD:
Pre-heat your oven to 180°C.
Line a baking tin with baking paper.
Cut the veggies into small pieces.
Place your yogurt and self-raising flour in a large bowl. Using the tips of your fingers, gently pull the flour over the yogurt and mix through to make a dough. Once it comes together, knead it until smooth then turn it onto a lightly-floured surface and roll into a large rectangle.
Liberally spread the rectangle of dough with the tomato paste, veggies and cheese.
Roll the dough up along the long edge and then cut into scrolls.
Place these side-by-side into the prepared baking dish with the pin-wheel pattern up, and then bake for 20-30 minutes, or until golden-brown and puffed up.
