CHOCOLATE SELF SAUCING PUDDING

INGREDIENTS:

Batter:

  • 1/2 cup plain self-raising flour

  • 1/2 cup wholemeal self-raising flour

  • ¼ cup cocoa powder

  • ½ cup brown sugar

  • 40g dark cooking chocolate

  • ½ cup milk

  • 1 egg

  • 60g butter, melted, cooled

Sauce:

  • ⅓ cup cocoa powder

  • ½ cup firmly packed brown sugar

  • 1¾ cups boiling water

METHOD:

  1. Preheat the oven to 180°C

  2. Sift the flour and cocoa powder into a medium bowl (pour in the left over bran). Add the sugar and stir to break up any lumps.

  3. Melt butter and set aside.

  4. Whisk together the milk, egg and butter in a jug.

  5. Melt chocolate

  6. Add the milk mixture and chocolate to the dry ingredients; use a whisk to combine.

  7. Grease an ovenproof dish

  8. Pour mixture into the prepared dish and smooth the surface with the back of a spoon.

  9. Sauce: Add cocoa powder and the sugar in a bowl and stir to combine, removing any chucks.

  10. Pour boiling water into the bowl containing cocoa and sugar mixture, stir to combine.

  11. Pour evenly over the surface of the batter.

  12. Bake for 50 minutes or until the cake topping is firm.

*cheat tip- place pudding in the microwave for 3 minutes then cook in the oven for 20 minutes :)

Serve with cream or ice-cream.
