APPLE AND CINNAMON SCROLLS

INGREDIENTS:

  • 2 cups vanilla Greek yogurt (I used vanilla YoPro by Danone)

  • 2 cups Wholemeal self-raising flour

  • 2 Tbsp Brown sugar

  • 2 tsp cinnamon

  • 1 Granny smith Apple (or apple of choice)

    *Optional*

    Glaze/drizzle:

  • powdered sugar

  • milk of choice

  • vanilla

METHOD:

  1. Pre-heat your oven to 180°C.

  2. Line a baking tin with baking paper.

  3. Cut the apple into small thin pieces.

  4. In a small bowel, combine the cinnamon and sugar to make the cinnamon sugar.

  5. Place your yogurt and self-raising flour in a large bowl. Using the tips of your fingers, gently pull the flour over the yogurt and mix through to make a dough. Once it comes together, knead it until smooth then turn it onto a lightly-floured surface and roll into a large rectangle.

  6. Liberally spread the rectangle of dough with the cinnamon sugar. Roll the dough up along the long edge and then cut into scrolls. Place these side-by-side into the prepared baking dish with the pin-wheel pattern up, and then bake for 20-30 minutes, or until golden-brown and puffed up.

To make the optional glaze drizzle icing: Mix together powdered sugar with a tiny dash of vanilla and a little splash of milk (add it one teaspoon at a time). Mix until you have a good drizzle consistency and then drizzle over the cooked buns in the pan.
