SUSHI BOWLS

INGREDIENTS:

  • Nori sheets (seaweed)

  • 1 cup brown rice

  • 3 Tbsp sushi seasoning (or as per instruction)

  • 300g extra firm tofu

  • 1 pinch Chilli flakes

  • 1 pinch Salt

  • 1 pinch Pepper

  • 2 Tbsp Wholemeal Flour

  • Lettuce

  • Avocado

  • Cucumber

  • Carrot

  • Reduced salt Soy sauce

  • Kewpie mayo (optional)

  • Extra Virgin Olive Oil

  • Edamame beans

METHOD:

  1. Cook rice for about 25 minutes, or as per instructions

  2. Drain excess water from rice and add the sushi seasoning

  3. Wash and cut up all vegetables

  4. Cut Tofu and coat in flour, salt, pepper and chilli flakes

  5. In a fry pan cook the tofu in oil until golden

  6. Once cooked add a splash of soy sauce

  7. Assemble the bowl

  8. Add a small amount of mayo and some extra soy sauce and enjoy
