APPLE AND RHUBARB CRUMBLE

INGREDIENTS:

  • 1 cup of rolled oats

  • 1/2 cup of wholemeal spelt flour (80g)

  • 3 Granny Smith Apples

  • 365g of rhubarb (roughly 5 stalks or 1 whole bunch)

  • 6 teaspoons of unrefined coconut sugar or brown sugar

  • 3 tablespoons of extra virgin olive oil

  • 1 tablespoon of buckwheat 

  • 2 tablespoons or 30g of Flaxseed meal

  • 3 teaspoons of cinnamon 

  • 1 teaspoon of vanilla essence or extract

  • 1/2 cup of water

METHOD:

  1. begin by pre heating the oven to 180 degrees Celsius 

Filling:

  1. chop apple and rhubarb into pieces, then put in a saucepan with water, 2 teaspoons of cinnamon and 2 teaspoons of sugar

  2. let them stew for roughly 5-10 minutes or until tender

  3. Put filling into a deep baking dish

Crumble:

  1. In a mixing bowl place oats, flour, Flaxseed meal, sugar and cinnamon, mix together. Then add in the vanilla and olive oil, stir mixture to combine 

  2. Put on top of filling making sure the crumble is even

  3. bake for roughly 30-35 minutes or until golden brown and crispy 

  4. Then serve with your favourite topping and enjoy -I like it best with vanilla ice cream!!
