SUPER GREEN SOUP

INGREDIENTS:

  • 500g of dried Green Split peas

  • Roughly 210g of fresh kale leaves Chopped

  • 6 cloves of garlic

  • 100g of baby spinach

  • 1 Leek

  • 1 whole broccoli (medium size) chopped

  • 1 medium brown onion

  • 1 L of vegetable stock

  • 1 L of water

  • 4 silverbeet leaves chopped (or about 30g)

  • pinch of salt and pepper

  • about 2 tablespoons of Extra virgin olive oil

  • 1 teaspoon of chilli flakes

    *optional*

  • 1/2 a teaspoon of curry powder for some extra flavour

METHOD:

  1. Put split peas in a large bowl with cold water (about 4 times as much water than the peas) and soak overnight or during the day for as long as possible (aim for at least 5-6 hours) in the fridge

  2. The next day (or when ready to use) drain the peas

  3. in a big saucepan or pot, add oil, then onion and cook until translucent. Then add leek and garlic and cook for a couple of minutes

  4. Then add the drained split peas and cook them for a further minute. after a minute add the stock, let that simmer for about 5 minutes and then add a litre of water.

  5. Add chopped spinach, silverbeet, kale, broccoli and chilli flakes as well as some salt and pepper and let them simmer for roughly 30 minutes (the longer you cook the veg the easier it’ll be to blend)

  6. Then using a food processor blend all the ingredients together until nice and smooth (I used a hand blender)

  7. Cook for a few more minutes to ensure the soup is nice and smooth and all the vegetables are fully cooked through

Makes roughly 8 serves and is very filling

…it is very low in saturated fat- it contains essential fats such as polyunsaturated fat and monounsaturated fat which can help lower LDL cholesterol (the bad cholesterol) as well as help absorb your fat soluable vitamins Vitamins A, D, E and K

This is a balanced meal that is perfect for lunch or dinner. Enjoy with some crusty warm bread on the side
