VEGAN SUNG CHOY BOW

INGREDIENTS:

  • 1 Cos lettuce hear/bunch

  • 1 x 400g can brown Lentils, drained

  • 50g TVP

  • 250g Bean shoots

  • 1x Carrot

  • 2 x Spring onion

  • 15g Ginger

  • 1 garlic clove

  • 1 teaspoon Hoisin sauce

  • 2 tablespoon reduce salt soy sauce

  • 2 x portobello Mushrooms

  • 1 small brown onion

  • 1 tablespoon Ketchup manis 

  • 1 Tbsp Extra Virgin Olive Oil

*optional add ins

  • Coriander

  • Red Chilli

  • Peanuts

  • Water chestnuts

  • Vegetarian oyster sauce

  • Zucchini

METHOD:

  1. Prepare Vegetables: Mince garlic and ginger, dice onion and mushrooms, chop spring onion and grate carrot. Pre pare the T.V.P by adding a tablespoon of reduced salt soy sauce, and boiling water leaving to rehydrate for 5 minutes. Rinse lentils

  2. In a fry pan add oil, and saute onion until golden then, add the garlic and ginger

  3. Add the mushroom, lentils and T.V.P and cook for 5 minutes, add the sauces and a splash of water then reduce heat and let it simmer for another 2 minutes

  4. Wash lettuce, and place a few spoons full of the mince followed by topping with bean shoots and carrot and serve

  5. *OPTIONAL* add the vegetables the the mince mixture and cook until wilted and serve
